Chorba Bil Tomatiche (soup with tomatoes, beans and Pasta)

olive oil
1 cup onion, finely chopped
1/2 cup celery, with leaves, chopped
2 cloves garlic, minced
1 28-ounce tin of tomatoes, with juice
1 cup white beans
5 cups beef or water
1/2 cup flat parsley, finely chopped
1 cup extra-finely sliced, then roughly chopped cabbage or swiss chard
2 zucchini cut into little cubes
1/2 cup little tiny macaroni
Spices: Saffron, turmeric and cumin. You can add some chilis for heat. But Algerian food is pretty mild overall. In Annaba, near Tunisia the food tends to have mor chilis. In Tlemcen they would add sweeter spices like cinnamon and cloves to the dish.

garnish with grated Gruyere (Algerians like gruyere) <this is not true, my husband hates it! :lol:

Shorba

Ingredients:

1 1/2 lbs chicken, cubed
1 yellow onion, grated
1/2 zucchini, grated
1/2 small potato, grated
1/2 rib celery with libs, halved
1 carrot, halved
1/4 cup dried chick-peas, soaked overnight in water and drained OR canned chick-peas
2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. cinnamon
1 tbsp. paprika
2 tbsp. tomato paste
1 tbsp. olive oil
8 cups of water
1/2 cup orzo or another soup pasta
1 tbsp. chopped parsley
1 tsp. chopped fresh mint leaves
lemon slices



Put meat, onion, zucchini, potato, celery, carrot, salt, pepper, cinnamon, paprika, tomato paste, oil, chick-peas (if using dried kind) and 1/2 cup of water in a large pot. Cover and saute over low heat for 20 minutes. Add the rest of the water, bring to a boil and simmer for 45 minutes. Add pasta and chickpeas (if using canned). Cook for 10 minutes. Add parsley and mint. Serve with lemon slices.

ohhh PLEASE PLEASE PLEASE TELL ME YOU KNOW HOW TO MAKE BOUFEDJOKH (it's a hot peppers which chaouia make with special seasonings and olive oil and they put it as a side dish with t3am and shorba, since the east side LOVE to eat chilli)

wait a second.. u guys use chicken in your chorba? don't think I've ever tasted that.. usually we use meat.

here you go

the red chili pepper one
take about 10 dried red chili peppers, soak them in olive oil for 2 days, with 2 cloves of smashed garlic, a teaspoon of salt, and squeeze one half of a lemon, let sit ok
on the 2cd day take out the chili peppers, take off the tops, and u can smash them, cut them long ways, or chop in small pieces,
add a pinch of cumin spice, and faa spice ( i dont know the name in english or arabic on this one) its a brown looking one kind of looks like cumin, add hot paprika spice
mix well, now mix in olive oil mix u used to soak the chilis in for 2 days
if u want more oil u can add in, if not hot enough, i sometime add some harrisa to it, (some people add cinnimin to it, but its funny tasting to me with a spicy and then bitter)



ok now if you are looking for the green one
take one whole garlice flower and bake also with the peppers
take about 10-15 green hot bannana peppers, coat with olive oil, and put in the oven on a sheet till they are golden brown and all soft, ( u can slice and long ways and fry them, but this is better for u, taste more like grilled)

when they are cooked, take out of oven, put in a plastic bag till cooled, now take the seeds and skin off the peppers, and the skin off the garlic, the garlic will smash up easy, cut the peppers in long slices, add about teaspoon lemon juice, salt, cumin (pinch) hot paprika (1/4 teaspoon) olive oil mix together nice with bread




ok then we have the boufedjoukh chalada mesweeha

ok take 4 tomatoes
1 large onion
5 large green sweet peppers
1 garlic flower whole
2 hot peppers

coat with oil and bake till tender and brownish looking,
repeat like on the top, put in plastic bag till cool, take off the skins, and seeds of the peppers only, garlic, onion, and tomatoe take off skin only
put in a blender , puree, add to blender some olive oil, salt to tast, hot paprika spice, pinch of cumin, 1/2 lemon sqeezed juice puree more
if not hot enough add 1 tablespoon of harrissa
put on a plate make like a bowl in the middle of it add olive oil to the top, with capers, and tuna
i always also like to add to the top green olives or parsley

hmm well me i would not want a man in my kitchen sorry, just weird, but he could help with laundry loool
and for mc donalds ewe, think u need to see the program and look at how many law suits there are against them for e-coli, and havings ground up fingers, cocroaches, and mice in the meat, sad and people love that stuff, its like eating a cardboard box,
and fries, now those are disgusting, better ones made at home,
and not to mention you are suporting israel when u buy it!!!!
