Chorba Mkat'fa


1 pound of Lamb (or Chicken, or Beef)
2 large Tomatoes or 2 spoons of Tomato paste
a hand full of garbanzo beans
1/2 cup of Oil or 1/2 cup of Butter
1 Onion dieced
1 Potato cubed
1 Carrot diced
1 Zucchini diced
1 bunch of Cilantro chopped
1/2 tea spoon of Paprika
a dash of Black Pepper
a dash of Cinnamon
1 package of Angel Hair Pasta
1 Lemon sliced opt

Preparation:

Wash the tomatoes and Puree them.
Cut the meat in small chunks
Clean and cut the vegetables in small pieces
Brown the meat, the Onion, the Tomatoes (or the Tomato Paste), half the
chopped Cilantro in the oil or the butter with the spices.
Add 1/2 litter of water and bring to a boil.
Add the vegetables and the Garbanzo Beans
Cover and let simmer for about 20 minutes (it might take longer)
Once the meat is tender and the vegetables are cooked add water to
in order to achieve the needed quantity. Add the Pasta and the second half
of the Cilantro. Let cook a little longer and serve with slices of Lemon.

what you need:

* 1 Large Onion
* 4 Whole Cloves
* 6 Cups Vegetable Broth
* 2 Pounds Butternut Squash -- cubed
* 4 Stalks Celery -- chopped
* 2 Cans Diced Tomatoes
* 2 Tablespoons Cilantro -- finely chopped
* 1/4 Teaspoon Turmeric
* 1/4 Cup Capellini -- broken
* 1 Cup Milk
* Salt And Pepper -- to taste
* 1 Large Lemon -- wedged


how to make:

Stud onions with cloves. In soup pot, combine broth, squash, celery, tomatoes, cilantro and turmeric. Cover and bring to a boil. Reduce heat to medium and cook until the vegetable are tender about 30 minutes. Discard onion and cloves. In blender, puree the soup. Return soup to pot and add pasta. Simmer for 8 minutes. Thin with milk and heat through. Season with salt and pepper. Serve with lemon wedges.

what you need:

* 1 Tablespoon Olive Oil
* 1/2 Pound Lamb (Optional) -- cubeed
* 1 Large Onion -- chopped
* 2 Teaspoons Ground Coriander
* 1/2 Teaspoon Cayenne
* 1 Pinch Black Pepper
* 1 Pinch Cinnamon
* 1 Teaspoon Salt
* 1 Pound Tomatoes -- mashed
* 1 Large Potato -- sliced
* 1 Large Carrot -- sliced
* 1 Medium Zucchini -- sliced
* 1 Stalk Celery -- chopped
* 1 Can Chick Peas
* 1/4 Pound Vermicelli
* 6 Cups Vegetable Broth
* 1 Medium Lemon -- thinly sliced

how to make:

Saute in oil lamb, onion, corainder, cayenne, balck paepper, cinnamon and salt. When meat is well browned, add 6 cups broth. GBring to boil. Add all vegetables. cover, recuce heat, simmer covered until vegetables are the desired consistency. Return to boil, add pasta until done, serve in bowls with slice of lemon on top of each.

Chorba Akhtaboot, Octopus Soup

* 1 medium Onion, chopped
* 2 hot green chilis, chopped
* 2 cloves of garlic, minced
* 1 can of chopped tomatoes
* 750 grams of Octopus, cleaned and cut into 2" pieces
* Handful of bulghur Wheat
* olive oil
* salt and pepper
* Spices of your choice

Directions

1) Saute the onions and peppers until translucent as shown, add the garlic and cook for a few minutes.

2) Drain the tomatoes, add to the aromatics and cook for about 15-20 minutes or until most of the liquid evaporates.

3) Add the Octopus and cook for about 10-15 minutes.

4) Cover with water and cook until tender for about 3 1/2 hours in a crock pot or 2 1/2 hours on the stove top.

5) Add the bulghur about 20 minutes before the dish is finished cooking. It's hard to over cook this dish.

6) Don't forget to season with salt and spices throughout the cooking process. Cook TO TASTE!!! You can add some fresh herbs at the end.

Algerian Tomato Vegetable Soup

(Chorba)


The quintessential Algerian soup, there are vast variations throughout the region. You can add or remove vegetables as
you like, but just make sure they are all diced or cut about the same size so they cook evenly. If you cannot find fava
beans, lima beans make a good substitute.

1 28 oz can chopped tomatoes
1 cup dried chickpeas (garbanzo beans), soaked overnight to soften or 1 can
1 cup dried fava beans (broad beans), soaked overnight to soften or 1 can
1 cup green beans
1 onion, diced
1 potato, diced
1 carrot, diced
1 zucchini, diced
1 celery branch, diced
1 bunch cilantro, chopped
Ĺ tsp. paprika
pinch of black pepper
pinch of cinnamon
salt
olive oil

In a heavy bottomed pan, heat olive oil over medium heat and cook until soft but not brown. Add carrot, potato, and celery
and continue to cook, turning down the heat if they start to brown. Add the paprika, black pepper, and cinnamon, and
salt to taste. Add tomatoes and the beans and zucchini. Add water until covered, about 6 cups, and bring to a rolling
boil. Add chopped cilantro and reduce to a simmer. Simmer for 30 minutes or until all the vegetables are tender and
the flavors have blended together.

Serve with a lemon wedge.

( I would say serve with bourek, or bread!!)
