Variante of Chourba A'ādess ...


Chourba A'ādess B'Khoudra


generous handful 1 cup -250g lentils
about 500g mutton, veal or beef
4 carrots, medium dice
2 turnips, med dice,
2 courgettes, med dice
2 tomatoes, grated
2 ribs of celery, med dice
1 large onion, diced fine
2 large potatoes, med dice
2 TBS tomato paste
olive oil/ butter
sprigs of fresh thyme
1 bay leaf
handful of parsley
salt/ pepper
lemon


Wash and sort the lentils. Soak in water for one hour
Sauté the meat with the onion in olive oil and/or butter
Add in the vegetables and seasoning.
Bring to a boil. Then lower the fire to simmer the soup for about 1 hour.
After cooking, you can either remove meat and vegetables go through the mill. Or leave it rather brothy - will thicken after the lentils are cooked.
Add in the lentils and courgettes simmer for half hour.
Add in the parsely and stir.


Serve with lemon.
